Frozen Banana Peanut Butter Cups

Hello! 

Finding ways to fit bananas into recipes has become a thing for me and I love it! Bananas are one of my favorites foods everrrr. I almost called this blog bananabopp :) I have a reusable banana case that my amazing friend gave to me to carry my banana in so it won’t get bruised. So, yeah, it gets serious around here. Honestly, if you were to ask my family what my favorite foods are, chocolate, peanut butter, and bananas would all be on that list.

These peanut butter cups are a delicious sweet treat. If you buy chocolate with no preservatives, natural flavors, oils, etc., this recipe is made of very simple ingredients. The ingredients are also inexpensive which is always a plus!

I used a double broiler for melting the chocolate but you could also melt it in a small bowl in the microwave for 20-second intervals. However, if you do that, I would only melt half at a time (1 cup) so the top layer of chocolate doesn’t harden while the first layers are freezing.

Tiff Tips

  • You can replace the banana layer with any frozen fruit you have. You may have to add a tiny but of liquid (1 Tbsp or so) if you use berries. For the bananas, though, you don’t need to add any liquid 

  • You can also replace the peanut butter with any nut butter you prefer

  • Make sure to grease the pan so the cups will come out easily. To remove them, I usually take a small knife and poke the edge and then tip and pop them out

Frozen Banana Peanut Butter Cups

makes approx 20 cups

Ingredients:

  • 2 cups chocolate chips or chocolate bar pieces

  • 7 Tbsp peanut butter

  • 2 small, ripe bananas, frozen

Instructions:

  • Melt half of the chocolate in a double broiler (or in the microwave)

  • Scoop 2 tsp of the chocolate into a greased mini muffin tin until all of the chocolate has been used

  • Freeze for 10 minutes

  • While the bottom layer is freezing, blend bananas in a food processor or blender on high until smooth consistency forms. I will take a few minutes

  • After the 10 minutes are up, remove pan and add 1 tsp of blended banana and 1 tsp of peanut butter to each cup

  • Freeze for 10 minutes

  • While the next layer is freezing, melt second half of chocolate

  • After the 10 minutes are up, remove pan and add 2 more tsp of chocolate to each cup making sure to cover the banana and peanut butter 

  • Freeze for 2-4 hours

  • Remove from pan and store in freezer for 2-3 months

Remove from freezer approximately 5 minutes before serving and enjoy!!!
