Blender Banana Pancakes

dairy free, gluten free, nut free

Maybe I should have called them, 

"Blender Banana Bopp Pancakes"????

If you immediately thought of "Banana Pancakes" by Jack Johnson, we are on the same wavelength and I love it. If you haven't heard it, it's worth the listen. I listen to it almost every time I make pancakes because I'm pretty sure it enhances the experiences x1000.

Pancakes hold a special place in my heart! When Ben and I first met, he would cook me breakfast all the time and he always made huge, aMAzInG pancakes. Anytime I come home from school for a holiday or break, he usually has a big pancake or Belgium waffle ready for me :) But, when we're apart, I get my pancake fix through homemade ones like these!!

You're going to love these Blender Banana Pancakes. Not only do they taste delicious but they're quick and easy...my favorite combo! I love eating pancakes after a long run on a Saturday morning. When I get back to the house, I'm usually ready. to. eat. Being able to throw all the ingredients together in a blender and have my batter ready in a couple of minutes is the best. 

This recipe would be great for kids if they love pancakes (and what kid doesn't??).

These are also awesome for meal prep! You can make a large batch and stick them in the freezer for later.

Tiff Tips

  1. Any milk will work. I used cashew milk and it worked great!

  2. Use gluten free oats to make this recipe gluten free

  3. Any liquid sweeteners will work in place of honey/maple syrup

the syrup shot is always the best 

Blender Banana Pancakes

makes 2-4 servings

Ingredients:

  • 1.5 cup oats

  • 1 large ripe banana

  • 1 egg

  • 1/2 cup cashew milk (or milk of choice)

  • 1 tbsp honey or maple syrup

  • 1 tsp baking powder

  • 1/2 tsp vanilla 

  • 1/4 tsp cinnamon

  • pinch of salt

Instructions:

  1. Combine all ingredients into a blender and blend until smooth

  2. Pour batter onto greased pan or griddle over medium heat

  3. Cook for about 2 minutes per side

  4. Serve with syrup, fruit, or yogurt and enjoy !

Store in refrigerator for up to 5 days and the freezer for up to 2 months
