Breakfast Egg Bake

 gluten free, grain free

A delicious, 4-ingredient egg bake perfect for family breakfast, brunch with friends, or meal prep!

Eggs are the best. End of story. 

Eggs are amazing for breakfast, lunch, or dinner as well as in many forms…especially an egg bake!

This Breakfast Egg Bake is made with eggs and egg whites to boost protein and lessen the amount of whole eggs per piece. I can easily put down quite a lot of eggs, especially in an egg bake, because l love love love eggs. But, I’d rather have a few eggs plus egg whites than eat 5 or 6 whole eggs at one time. This is based both on personal preference and a nutritional perspective. It is completely up to you though whether you combine whole eggs and egg whites or stick to only whole eggs. 

Aside from the eggs and eggs whites, the only other ingredients for this dish are feta cheese and spinach. The feta adds great flavor and salt to the bake (which is why I chose not to put in additional salt) and the spinach adds micronutrients. I didn’t feel the need to add any seasonings because I genuinely love the taste of eggs and feta but you can easily customize this egg bake any way you’d like with seasonings that you enjoy.

I topped this egg bake with salsa and paired it with a bagel thin and fruit! This dish works great to make for one person (and have leftovers) or for a group. As I said before, it’s easy to customize by adding meat, replacing the cheese, omitting the spinach, adding seasonings, or making other changes based on your preferences.

Ingredients:

  • 6 eggs

  • 1 cup egg whites

  • 1 cup packed, fresh spinach

  • 2/3 cup feta cheese

Instructions:

  1. Preheat oven to 350 degrees

  2. Scramble eggs and egg whites in a large bowl

  3. Add feta to eggs and mix

  4. Pour mixture into a baking pan

  5. Tear or chop fresh spinach and sprinkle over top

  6. Bake in the oven for 30 minutes

  7. Remove from oven, serve warm, and enjoy!
