Chick Pea Salad

A fresh plant-based, lettuce-free salad made with simple ingredients 

Beans are such an awesome food!!…I can’t get over it. They’re tasty, inexpensive, nutritious, and so versatile!

If you’re looking for budget-friendly food ideas that are also super great for you, beans are the way to go. They have a good amount of protein and carbohydrates so they also make for a good plant-based option. 

Chickpeas in particular are really useful in some dishes because they hold up better than other beans that get mushy easily. 

This chick pea salad has a greek feel to it and I love it! Greek/Mediterranean seasonings and ingredients are my favorite and this recipe hit the spot!

You’ll only need 5 ingredients plus seasonings for this recipe so it’s a quick and easy one. It’s delicious as a meal, side dish, or snack!

Ingredients:

  • 2 cans chickpeas (garbonzo beans), drained and rinsed

  • 1 cup chopped cucumber (peeled if desired)

  • 1/2 cup chopped tomato

  • 1.2 cup chopped purple onion

  • 1 Tbsp olive oil

  • 1/2 tsp thyme

  • 1/2 tsp rosemary

  • 1/2 tsp black pepper

  1. Drain and rinse the cans of chickpeas

  2. Chop cucumber, tomato, and onion

  3. Add all ingredients into a medium sized bowl and mix together

  4. Serve cold or warm and enjoy!
