Easy Chicken Coconut Curry Soup

If you’ve had curry before, you know how good that first bite is, instantly filling your mouth with a warm and slightly spicy flavor. The first bite of this curry soup is no exception!

You can enjoy this soup on it’s own or you can pour it over some rice to make the meal more filling. This recipe is perfect for combatting the cold weather that’s quickly approaching! This soup is filled with chicken, vegetables, broth, coconut milk, and incredible flavorful additions. 

I first fell in love with curry in New York when I went to this little Indian restaurant downtown with some friends. I hadn’t had much Indian food before this experience so everything I tried was so unique to me and I couldn’t get enough. The flavors were like nothing I had ever tasted before and I thought it was the most amazing food. Every time I visit New York now, I want to visit this little Indian restaurant but since I can’t exactly eat there too often (considering I’m about 24 hours driving distance away), I made a dish that somewhat resembles the delicious spices and nuances of the food so I can enjoy it whenever I get that craving.  

This Chicken Coconut Curry Soup is super easy to make. You simply cook chicken, cut veggies, and toss everything into a pot to simmer for 10-20 minutes. If you need a quick yet delicious and healthy dinner idea, here it is! It can also be used as meal prep since it makes about 4-6 servings. I love it plain and over rice so you could mix it up a little. 


There are some unusual ingredients in this recipe but don’t let that scare you. If you’ve never used curry paste, fish sauce, or chili sauce before, we’re in this together! I hadn’t used any of these either until creating this recipe but let me tell you, I’ll be using them nonstop after this. These ingredients add such wonderful and unique flavors to the recipe that you don’t want to miss out on. You can easily find these ingredients in the international section of your local grocery store (by the seaweed and canned coconut milk). Or better yet, just ask an employee and make it even easier! These ingredients, especially the chili sauce and fish sauce, come in pretty big containers making it well worth the money. And I doubt they’ll be wasted because I know you’ll love them and want to use them in everything after this dish!

Curry Powder

Curry powder is a blend of various spices and it can differ from brand to brand. Whatever coconut curry powder you choose will most likely work great! If you can’t specifically find coconut curry powder but you can find traditional curry powder, you can just throw in some coconut flakes to add some of that coconut flavor to the soup.

  • 1 lb chicken breast

  • 1 Tbsp coconut oil

  • 1 Tbsp coconut curry powder

  • sprinkle of salt


  • 1 cup chicken broth (low sodium)

  • 1 can lite coconut milk

  • 1 bell pepper

  • 1 cup chopped carrots (~ 2 large)

  • 1/4 onion

  • 1/4 cup chopped cilantro

  • 2 Tbsp minced garlic

  • 2 Tbsp curry paste

  • 1 Tbsp lime juice (~ 1/2 small lime)

  • 2 tsp fish sauce

  • 2 tsp chili garlic sauce

  1. Melt coconut oil in a pan over medium heat

  2. Cut chicken into desired size for soup and add to pan. Sprinkle curry powder and salt over chicken and stir

  3. Let cook until inside of chicken has no more pink and most of oil is gone

  4. Add chicken and oil, chicken broth, coconut milk, garlic, curry paste, lime juice, fish sauce, and garlic sauce to medium sized pot over medium-low heat and let simmer, stirring occasionally

  5. Chop carrots, bell pepper, onion, and cilantro and add to pot. Increase heat to medium

  6. Let soup cook for about 10-20 minutes or until carrots are soft and soup is warmed through. Stir occasionally

  7. Serve warm as soup or over rice and enjoy!!
