Chocolate Coconut Granola

An easy-to-make granola full of chocolatey-coconut flavor!

Nothing beats baking and chocolate pancakes on a rainy Saturday morning!


I heavily underestimated how delicious chocolate and coconut are together. I knew it was a popular combo but I had never been interested in it until recently….until this granola.
I love making homemade granola! It is one of the easiest recipes to make, it provides a good amount of food per batch, it’s easy to customize, and it’s much cheaper than store-bought. As long as the basics (oats, oil, and sweetener) are there, the rest of the ingredients are all based on the intended flavor.
I’ve created a few different types of granola [Honey Cinnamon, Maple, Fruit & Nut, Spice] but I’ve been wanting to make a chocolate one for a while now so hello new granola!

Ingredients

If you are gluten free or making this for someone who is, use oats with a gluten free label (oats themselves are gluten free but cross contamination in factories is common unless specified otherwise).

I use unsweetened coconut because the granola is sweet enough for me but sweetened will also work great!

Liquid sweetener could be maple syrup, honey, agave syrup, etc. For the batch I made, I used maple syrup.

I’ve made this recipe with and without chocolate chips and I really loved both. Adding chocolate chips felt more like a dessert to me and omitting them seemed more breakfasty so depending on when you’ll be eating it, one may work better for you than the other.

Oil could be coconut oil, avocado oil, olive oil, etc. I’ve personally used avocado and coconut and they both taste delicious in it. I will say that unrefined coconut oil adds even more coconutty taste so if you really enjoy coconut flavor, I would suggest using unrefined coconut oil.


I love sprinkling this granola on top of yogurt. In this picture, I made dark chocolate Kodiak Cakes, topped with coconut yogurt, this Chocolate Coconut Granola, and some strawberries!! YUM
Ingredients:

2 cups oats

1/2 cup shredded coconut (unsweetened)

1/3 cup liquid sweetener

1/4 cup cocoa powder
-
1/4 cup chocolate chips (optional)

3 Tbsp oil
-
Pinch of salt

Instructions:

Preheat oven to 350 degrees

Add oats, coconut, cocoa powder, and salt to a large bowl and mix together

Add liquid sweetener and oil to a small bowl and mix together

Add wet ingredients to dry and ingredients and mix until combined

Optional: stir in chocolate chips

Spread mixture evenly onto a greased or parchment paper-ed baking sheet

Bake in the oven for 10 minutes, stir, and then bake for another 8 minutes

Turn the oven off and crack the door open

Let granola sit in oven for at least 10 minutes

Serve warm or cool and enjoy!
Store in a sealed container for up to 3 weeks
