Chocolate RX Bars

A yummy, homemade remake of chocolate RX bars
If you don’t know what RX bars are, they’re a packaged protein/energy bar made with only dates, nuts, egg white protein, and whatever flavor it is (ex. chocolate chunks).
I really enjoy bars because they’re quick, easy, and tasty! But I don’t buy them often because it’s hard to find ones that don’t have unnecessary ingredients. RX bars is one of the brands, however, that I’ve found that have minimal ingredients and taste great!
I wanted to do a remake of these bars because
I love experimenting and making remakes of packaged foods
It’s a way to save money
And I can customize any way I’d like
Obviously, if it’s easier or if you’d rather buy them at the grocery, definitely do it! But if you enjoy making things at home…this recipe is an awesome one to try!!!
This remake recipe turned out exactly like the original bars and they were so delicious!! If you’re looking for a bar to make that’s different than an oat-based granola bar but still yummy and nutritious, I would recommend these bad boys!
8 oz. package of pitted dates
1 cup raw almonds
1/4 cup protein powder
1/4 cup cocoa powder
6 Tbsp water
sprinkle of salt
Boil water, remove water from heat, and soak dates for about 5 minutes
Add dates to a food processor or high powered blender and blend until smooth
Add remaining ingredients and blend until fully combined, scraping the edges as necessary
Transfer batter into a greased or parchment paper-ed 8x8 pan and press evenly to the bottom of the pan (tip: use a piece of parchment paper to lay on top of the batter and press evenly)
Refrigerate for at least 30 minutes
Cut into bars and enjoy!
Stays most fresh in the refrigerator
