"Cookie Dough" Chocolate Chip Cookies

paleo, gluten free, dairy free

GLUTEN FREE!!!

I admit it. I am a cookie monster. Cookies are my favorite dessert and I'm always trying to find healthier ways to enjoy them. I decided that I would try and create my own recipe (which is much harder than you think because baking is like a science experiment and so many things can go so wrong in so many ways). But, my niece and nephew are LOVING the recipe testing so at least they're enjoying all of this trial and error :) Anyways, I started with a simple chocolate chip cookie and once I got the recipe right....HAPPY TIFF. They have this kind of soft baked texture but not exactly. When I tried one, it immediately reminded me of cookie dough but in a "set" form. Whatever you want to call it, it's amazing. They're not super sweet but I find it to be just enough and if you use unrefined coconut oil, they'll have a slight coconutty taste. Yum.

Make sure to flatten the cookies before baking!

Tiff Tips

  • If you put them in a container for about an hour or longer...the texture gets even better!!!

  • These cookies are slightly sweet but if you want them sweet-sweet, add 1/4 cup honey :)

"Cookie Dough" Chocolate Chip Cookies

yields 18-20 cookie

Prep Time: 10 min | Cook Time: 11 min | Total Time: 21 min

Ingredients:

DRY

  • 1 1/2 cups almond flour

  • 1/2 cup coconut flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • 1/2 tsp salt

WET

  • 2 eggs

  • 2 Tbsp honey

  • 1 tsp vanilla extract

  • 1/4 cup liquid or melted coconut oil

ADD INS

  • 1/4 - 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 350 degrees

  2. Combine dry ingredients in a large bowl

  3. Combine wet ingredients in a small bowl

  4. Add the wet ingredients to the dry ingredients and mix until dough forms

  5. Fold in chocolate chips

  6. Use a cookie scoop or a heaping Tbsp to place dough on baking sheet (these cookie do not spread)

  7. Use the bottom of a glass or any flat surface to press on each cookie

  8. Bake in the oven for 11 min and then allow to cool on baking sheet for a few minutes before removing

  9. Store in air container for 2-3 weeks
