Crockpot Taco Soup

A flavorful taco-style soup that only takes 5 minutes to throw into the crockpot.

Crockpots are one of the best appliances when it comes to busy days. During those busy schedules, it’s nice and, argumentatively, still very important to have home-cooked meals. It may seem easier to drive through and grab fast food but recipes like this one provide another, easy alternative that can make the fast food trips less frequent.

For me, I woke up early on Sunday morning and quickly tossed all the ingredients into the crockpot before church so that when I came home, lunch (as well as leftovers for the upcoming week) was already ready. This allowed me to get some work done and enjoy other things throughout the day. 

Aside from the conveniency of the crockpot, the thing that makes this recipe so easy is that it mainly involves transferring ingredients from a package (ground turkey), carton (broth), or cans (beans, corn, and rotel) into the crockpot. The only thing left to do after that is chop half an onion and throw in some spices. Super easy and pretty much impossible to mess up. 

Taco soup is a hit with almost everyone I know! The familiar flavors of Mexican food appeal to many people and the ability to “dress it up” with cheese, avocado, and sour cream (or plain greek yogurt) makes it even more delicious. 

This soup is gluten free and dairy free (as long as you don't use any cheese, sour cream, or yogurt on top) so if you or someone you know has one of those preferences, this would be a great option to make! And even if you don’t have either of these preferences, this recipe still a delicious option for all!!

Tiff Tips

  • The meat can be cooked in a pan over the stove before transferring to the crockpot. If you do this, the meat will have more definitive pieces

  • Any bean can be substituted for the black beans

  • I prefer to drain and rinse the beans and corn because I don’t always love what they’re canned in and I don’t want the extra sodium but it is not necessary to drain and rinse

  • Any broth can be used

  • The ground turkey can be substituted with ground beef or ground chicken, a faux meat, or omitted altogether

Crockpot Taco Soup


  • 1 lb ground turkey

  • 2 cans black beans, no salt added

  • 2 cans corn, no salt added

  • 2 cans rotel with green chiles

  • 1 carton of broth (2lb), low sodium

  • 1/2 white onion

  • 2 tsp cumin

  • 1 1/2 tsp garlic powder

  • 1 tsp chili powder

  • 1/2 tsp paprika

  • 1/2 tsp oregano

  • 1/2 tsp salt


  1. Chop half of a white onion

  2. Drain and rinse the cans of beans and corn

  3. Add rinsed beans and corn, rotel, chopped onion, carton of broth, ground turkey, and seasonings to the crockpot

  4. Stir until mixed, making sure to break up ground turkey

  5. Set crockpot to low for 3-4 hours or high for 2 hours

  6. Optional: top with cheese, avocado, and/or sour cream (or plain greek yogurt)

  7. Serve hot and enjoy!
