Fall Apple Pecan Salad

gluten free, vegan, dairy free

A lot of Fall recipes are warm, complex, and usually pretty filling. Sometimes, amidst all the Fall dishes, I crave something light..

This Fall salad is perfect for just that! It’s nutty, naturally sweet, and easily customizable. This is a very basic version of what my Fall salads usually consist of. These are some of my favorite toppings that I love putting on this salad but there are also numerous other options you can add on based on your preferences.

Another great thing about simple salads such as this one is how quick it is to throw together. An apple takes a minute or so to cut or you can have some already chopped in the fridge. The rest of the toppings are in the pantry and you just sprinkle them on top. Limited time doesn’t have to hinder you from enjoying a healthy meal!

I almost always opt for no dressing on my salads purely because I just don’t like it. However, I know a lot of people can’t stand salad without dressing so I thought I’d come up with one that meshed well with the salad flavors for y’all to enjoy. The dressing/vinaigrette I paired with this salad is made with only 3 ingredients and is individually sized which I love because this way, you don’t have to worry about using up a big bottle of dressing in the fridge before it goes bad!

Some other toppings I think would be delicious on this salad are feta cheese, grilled chicken, butternut squash, roasted sweet potato, pomegranate seeds, shaved Brussel sprouts, quinoa, walnuts, and avocado.

If you’re craving something light and refreshing this season, try this salad out and make it your own!
