Flourless Chocolate Cookies

gluten free, grain free, dairy free option

Fudgey, chocolatey cookies made as dark or as sweet as you’d like

5 ingredients!!…5 simple ingredients is all it takes to make these delicious, easy-to-make cookies!

Chocolate is the best of the best when it comes to dessert and these cookies are pretty much pure chocolate. You can make these cookies rich and more bitter by using a higher percentage chocolate or light and sweeter by using a lower percentage chocolate. (The chocolate will become more bitter each day after baking which is something to consider when choosing chocolate)

The batter for these cookies will be very wet but once baked, they come out of the oven as beautiful cookies that are slightly brownie-like.

This recipe is flourless (gluten free and grain free) making it awesome for those who have certain allergies, intolerances, or food preferences. It can also be made dairy free by purchasing dairy free chocolate. 

You can whip the egg whites with a mixer which makes it much quicker and easier as well as makes the egg whites fluffier. But, if you don’t have access (or don’t feel like pulling the mixer out), you can whisk the egg whites as much as you can by hand and it will still work great!

You can add fun sprinkles to the cookies immediately after removing them from the oven. You can also make a homemade date “caramel” sauce to top these with which works especially well on a dark chocolate cookie to balance out the bitter with the sweet.

 

Homemade Date “Caramel” Topping

 

  • 1 cup pitted dates

  • 1 Tbsp maple Syrup

  • 1 Tbsp water

 

  • Blend in food processor or high powered blended until smooth

makes approx 12-16 cookies

Ingredients:

  • 4 oz chocolate (higher percentage will make a dark chocolate cookie, lower percentage will make a sweeter cookie)

  • 1/2 cup cocoa powder

  • 1/2 cup maple syrup

  • 2 egg whites

  • 1/2 tsp vanilla

  • 1/4 tsp salt (optional)

Instructions:

  1. Preheat oven to 350 degrees

  2. Whip egg whites in a large bowl using a mixer or whisk by hand until foamy

  3. Add remaining ingredients to egg whites and mix until just combined

  4. Using a cookie scoop, place balls of dough on a baking sheet and bake in preheated oven for 12-16 minutes

  5. Remove from baking sheet and let cool on rack

Store in sealed container for up to one week
