Fresh Chicken & Bean Salad

These pictures remind me of times when I can get creative, have some down time, and be in the moment. It may seem like a salad is a silly thing to feel this way about but for me, this is one way I take the necessary time I need for myself during busy weeks or busy weekends. Usually, I breathe and just have fun using all sorts of prepped toppings and ingredients that I have in the house to make my meal look extra fancy. Then, I get to sit down in front of this big window that lets in a ton of sunlight and enjoy the quiet for a while (as long as the kids are napping haha). Taking down time is essential to let your mind and body rest with all that we have going on in life. Whether it’s painting, taking a walk, or decorating a salad, try to find little things you enjoy where you can unplug and not be “busy” for a few minutes of your day. 

If I don’t have a meal planned out, if I’m short on time, or if I just don’t feel like cooking, these are the type of bowls I love throwing together. There are so many ingredients and nutrients, besides the usual lettuce and chicken, that you can add to a salad. 

This is one of my favorite combos! Experiment with whatever ingredients you have access to and make it your own. For me, it helps to pre-cook chicken and have veggies already cut up in the fridge. I bake or poach the chicken and usually just keep it plain. I hope you all enjoy your own salad combo and some needed down time. 

Fresh Chicken & Bean Salad

serves 1


  • 2 cups salad mix

  • 1 cooked and shredded chicken breast

  • 1/2 cup chopped zucchini

  • 1/2 cup yellow squash

  • 1/3 cup rinsed beans

  • 1/4 cup chopped tomato

  • 1/4 ripe avocado 

  • 2 Tbsp chopped red onion

  • 2 Tbsp nutritional yeast

  • 1 Tbsp lemon juice

  • 1 Tbsp tahini

  • 1 Tbsp hemp seeds

  • 1 Tbsp pumpkin seeds

  • 1 tsp ACV

  • Pinch of salt


  1. Add salad mix to a bowl, put ACV, lemon juice, and salt on top, and mix together

  2. Add veggies, tomato, and onions and mix together

  3. Top with chicken, beans, avocado, nutritional yeast, seeds, and tahini
