Gingerbread Oat Balls

gluten free, dairy free, vegan

A healthy, portable snack made with oats and cashews and dates

and flavored like a yummy gingerbread man

These oat balls are often called “energy balls” and I love that there are so many combinations you can make. This version is perfect for the winter / Christmas season. The warm spices of ginger, cinnamon, nutmeg, and cloves combined with the rich molasses creates a delicious gingerbread flavor.

The directions are simple. Once the dates and cashews are soaked, you simply throw remaining ingredients into a food processor or high powered blender and blend until combined, Then, you form batter into balls and freeze for 10 minutes. And that’s it. They’re quick and easy to throw together plus this recipe makes 16-20 balls so it’s great to last you a while. (** note: if you or someone you're making these for is gluten free, use gluten free oats to reduce possibility of cross contamination)

Ingredients:

  • 1 cup oats

  • 1 cup cashews

  • 10 pitted dates

  • 1 Tbsp molasses

  • 1 Tbsp maple syrup

  • 1/2 tsp vanilla

  • 1/2 tsp ginger

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp cloves

Instructions:

  1. Heat approximately 2 cups of water until almost boiling (microwave or stove)

  2. Add cashews and dates to hot water and let soak for at least 10 minutes

  3. While cashews and dates are soaking, add oats, ginger, cinnamon, nutmeg, and cloves to a food processor or high powered blender and blend on low for about 1 minute

  4. After 10 minutes, add soaked cashews and dates to the oat mixture and blend on low until cashews and dates are finely chopped

  5. Add molasses and maple syrup and blend until combined

  6. Form batter into desired ball size and place on baking sheet covered with parchment paper

  7. Place balls in freezer for 10 minutes

Refrigerate for up to one week

or freeze for up to 3 months
