Grilled Peach and Brie Sandwich

Summer is flying by quickly so I'm taking advantage of all the grilling I can!!! If you've ever had grilled peaches, maybe with some vanilla ice cream, you know how warm and sweet and delicious they are! Now, combine that with fresh sourdough bread and soft brie cheese and you'll be even more in love with them.

Regular grilled cheeses aren't really my thing but for some reason this combo sounded so good to me. I've heard of sliced apple, jam, and other fruits on grilled cheeses before and always thought they sounded fresh and yummy so I thought I'd give it a try. No regrets here!!! I think it's one of my favorite sandwich combos now :)

Grilled Peach and Brie Sandwich

makes 1 sandwich

  • 2 pieces sourdough bread (or bread of choice)

  • desired amount of brie cheese or brie cheese spread

  • 1 large peach

  • about 1 Tbsp butter

  • Begin by heating your grill (or griddle/grill pan/regular pan)

  • Cut peach into slices thick enough to hold together when cooked

  • Grill for approximately 10 minutes flipping every couple of minutes or so until both sides are browned

  • While the peaches are cooking, butter both pieces of bread on one side and place (or spread) brie cheese on the other side

  • When peaches are finished cooking, remove from grill or pan and set aside

  • Place bread, buttered side down, onto the grill or pan and cook until bread is browned and cheese is melty

  • Turn grill or burner off, place peach slices onto one side of the sandwich, close sandwich, and let sit on heat for a minute or so to mesh the peach slices with the cheese

  • Serve hot and enjoy!!
