Paleo Chocolate Cupcakes

with a white chocolate avocado frosting

Happy Halloween!

The softest, bakery-style chocolate cupcakes with a unique and delicious white chooclate avocado frosting!

These cupcakes are light, springy, chocolatey, and slightly sweet. The flavor and texture makes these good enough to be eaten without any frosting!

The frosting, however, is a an almost irresistible addition to these cupcakes. It adds a creaminess, an extra bit of sweetness, and of course, an awesome Halloween-style decor on top. 

This dessert welcomes many food allergies/intolerances/preferences. The recipe is gluten free, dairy free, grain free, refined sugar free, and nut free. 

If you want to celebrate Halloween with family, friends, or little ones in a fun way, surprise people with these amazing chocolate cupcakes! Or if you want to enjoy some chocolate cupcakes with a naturally lime green frosting for no reason at all, make these bad boys!!!!!

makes approx 24 cupcakes

Ingredients:

cupcakes:

  • 1 1/2 cups cassava flour

  • 1 cup coconut sugar

  • 1/2 cup cocoa powder

  • 1 1/2 tsp baking soda

  • 1/4 tsp salt

  • 2 eggs + 1 egg yolk

  • 1 cup non dairy milk 

  • 1/2 cup liquid coconut oil

  • 1 tsp vanilla extract

 

frosting:

  • 1 cup ripe avocado (about 1 large)

  • 1/2 cup white chocolate chips

  • 3 Tbsp maple syrup

  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat oven to 350 degrees

  2. Sift flour, coconut sugar, and cocoa powder (using a strainer) into a large bowl

  3. Add baking soda and salt and mix together until just combined

  4. Add eggs, yolk, milk, liquid (or melted) coconut oil, and vanilla to a small bowl and mix until just combined

  5. Slowly add wet ingredients to dry ingredients and mix together until the batter is just combined, don’t over-mix

  6. Fill a greased muffin tin with batter, filling each slot to the top

  7. Bake in oven for 15-17 minutes

  8. (For frosting:) While cupcakes are baking, melt white chocolate chips

  9. Add melted chocolate chips, avocado, maple syrup, and vanilla to a food processor and blend until fully combined, scraping the sides occasionally, set aside

  10. Once cupcakes are cool, decorate with avocado frosting any way you like and enjoy!!

Store in sealed container for up to 5 days. Refrigerate to extend freshness
