Halloween Salad

gluten free, dairy free, vegetarian, nut free

Unique, yet simple. Nutritious, yet delicious. 

This Halloween Salad is full of color and full of great flavor!!

If you’re craving a light salad this Halloween season, make it themed! Or if you’re trying to incorporate more veggies into your family’s diet, make it fun with crazy color combos. 

This salad is easy to customize and quick to throw together. If you have a Halloween party coming up, this would be a great nutritious dish to bring.

serves 1

Ingredients:

  • 2 cups spinach

  • 1-2 hard boiled eggs

  • 1/2 cup chopped purple cabbage

  • 1/3 cup chopped orange and purple carrots

  • 1/3 cup chopped zucchini

  • 1/3 cup black beans, rinsed and drained

  • 1 tsp olive oil

  • 1 tsp lemon juice

  • 1/2 tsp apple cider vinegar

  • 1/4 tsp paprika

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

Instructions:

  1. Chop vegetables and cook egg(s) if not already cooked

  2. Combine all ingredients except spinach and egg(s) in a bowl and mix together until fully combined

  3. Place mixture over spinach and add sliced egg on top

  4. Serve immediately and enjoy!
