Hummus Style Deviled Eggs

A healthier twist on deviled eggs

With Easter approaching, I thought of sharing this yummy twist on deviled eggs for upcoming holiday celebrations!

I love eggs with all my heart and I could eat them every single day! I do not however, like deviled eggs because mayonnaise and I are not friends…never have been, never will be.

So, to make this classic recipe a little healthier and more of something I’d enjoy, I created a flavorful filling replacing the mayonnaise with hummus.

Deviled eggs are a great appetizer/snack to have out at holidays or family and friend gatherings. They also make for a great, nutritious snack to have in the house! I hope you enjoy these Hummus Style Deviled Eggs!
Ingredients:

6 eggs
-
3 yolks (1/2 of the yolks from the eggs used)

3 Tbsp hummus
-
2 Tbsp water
-
1 tsp garlic powder
-
1/2 tsp paprika
-
Salt to taste

Boil six eggs. Option 1. Egg cooker. Option 2. Submerge eggs in water in a pot over the stove. Bring to a rolling boil, turn off the heat, and cover with a lid for 6-12 minutes. Then, transfer the eggs to a bowl of ice water and let cool completely.

Peel the eggs and cut each one in half, long ways

Remove the yolks and keep half for the mixture

In a small bowl, add the 3 egg yolks and the rest of the ingredients and mash together until smooth

Fill each egg half with the mixture and add an extra sprinkle of paprika to the top of the eggs

Serve cold and enjoy!
Store in the refrigerator for 3-4 days
