Maple Granola

 gluten free, nut free

If you love the taste of pancakes and waffles with maple syrup,

you will LOVE this granola recipe. 

Made with only 3 main ingredients (5 total!!), this granola is simple to make and great for prepping ahead! The recipe makes 2-3 mason jars (16 oz) full of granola and will last for 1- 2 months which is why I love making it! I'll quickly throw together a batch on the weekend and then I'm all set . I like using pure maple syrup because it adds a richer taste to the granola. I also like it because it only has one ingredient (maple syrup) so if you can get your hands on it, I'd suggest using pure. If not, whatever syrup you have will work!

I love when my yogurt or smoothie bowl has a crunch to it and this granola is perfect for just that! I also enjoy having is it as a pre workout snack or dessert before bed!

WARNING: this stuff is slightly addicting so a good portion of it may or may not disappear soon after making it if you love granola as much as I do :) No judgment

Maple Granola

Ingredients:

  • 3 cups old fashioned oats (or gluten free oats)

  • 1/2 cup maple syrup

  • 1/4 cup coconut oil

  • 1/4 tsp salt

  • 1 tsp vanilla

Instructions:

  1. Preheat oven to 350 degrees

  2. Mix oats, and salt into a large bowl

  3. Mix syrup, oil, and vanilla into a small bowl

  4. Add wet ingredients to dry and mix thoroughly

  5. Spread mixture onto a greased baking sheet and bake in oven for 8 min

  6. After 8 minutes, stir mixture and lightly press with spatula

  7. Bake for 12 more minutes

  8. Turn oven off, crack oven door, and let completely cool for at least 25-30 minutes

  9. Enjoy with yogurt, a smoothie, ice cream, plain, or with milk! Store in air tight container for up to 1 month
