Maple Pecan Cookies

Soft and sweet oatmeal cookies filled with maple flavor and pieces of pecans

This cookie recipe is one of my favorites by far! The oats in these remind me of a sweet breakfast cookie and the maple flavor reminds me of pancakes and waffles!

The texture of these cookies is unique and yet perfectly matched to the flavor. Because of the oat flour, they have the feel of an oatmeal cookie. The maple syrup and butter give the irresistible flavor of breakfast and the pecan pieces bring it all together. 

This recipe is quick to throw together and makes quite a few cookies making it perfect to bake and gift to loved ones or bring to a party or large gathering. 

The whole wheat flour can be replaced with all purpose flour or gluten free baking flour. The coconut sugar can be replace with cane sugar or brown sugar. The butter can be replaced with oil. ** I have not personally tested these substitutions.

  • 2 1/2 cups oat flour (blended oats)

  • 1 cup pecan halves

  • 1/2 cup whole wheat flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • 2 eggs

  • 1/2 cup unsalted butter (1 stick)

  • 1/2 cup maple syrup

  • 1 tsp vanilla

  • 1/2 tsp salt


  1. Preheat oven to 350 degrees

  2. Melt butter in a small bowl

  3. If not store bought, blend oats in a food processor or blender until coarse flour forms

  4. Mix oat flour, whole wheat flour, sugar, baking powder, and salt together in a large bowl

  5. Once butter is cooled, add eggs, maple syrup, and vanilla and mix together

  6. Add wet ingredients to dry ingredients and mix until combined

  7. Fold in pecans

  8. Measure two heaping tablespoons or use a cookie scoop and place balled dough on baking sheet

  9. Bake in oven for 9-11 minutes

  10. Remove from baking sheet and let cool on wire rack

Store in sealed container for up to 10 days
