Maple Pecan Balls

A delicious Fall-flavored, sweet snack!

These no-bake Maple Pecan Balls are the perfect size to pack on the go. 

My favorite way to enjoy these is as a dessert after lunch or as a pre workout snack.

If I was a coffee drinker, I would definitely sit down in a front of a big window with the sunshine coming through as I sip my coffee and enjoy one of these mapley, cinnamony bites. SO COZY. (PS something to know about me…I really want to like coffee for some reason but it’s just not happenin’)

The only items you need for this recipe, besides the ingredients, are a bowl, a big spoon, and some measuring cups! The less dishes the better am I right. 

Quick oats or old fashioned oats will work for this recipe. Peanut butter can be substituted with any nut butter. Maple syrup can be replaced with any liquid sweetener. 

These guys will keep in the fridge for 7-10 days or in the freezer for up to 3 months. I like to go ahead and keep them in the freezer and then when I want to pack some, I’ll throw them in a container and they’re thawed by the time I go to eat them. If you decide to freeze them and aren’t planning on packing them, you can set some out about 10 minutes before eating. I love freezing food, especially baked goods or treats, because I feel less pressured to finish all of it in a certain time and instead, I’m able to pull something out and enjoy whenever I’m in the mood.

Ingredients:

Instructions:

  • 2 cups oats

  • 3/4 cup peanut butter

  • 1/2 maple syrup

  • 1/2 cup pecans

  • 1 Tbsp milk of choice

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  1. Add peanut butter to a bowl and melt in the microwave

  2. Add melted peanut butter, oats, maple syrup, milk, cinnamon, and vanilla to a large bowl and mix together

  3. Stir in pecans

  4. Form batter into balls of desired size and place on cookie sheet

  5. Add balls to the freezer for about 20 minutes

  6. Store in the fridge for 7-10 days or the freezer for up to 3 months
