Meatloaf "Cupcakes"

with mashed potato frosting

The cutest meatloaf you've ever seen!!!!!!!

If you're a meatloaf and mashed potatoes fan, 

you have to try these out!  

The words meatloaf and cupcake in the same sentence...bold choice, I know, but also, an amazing 

choice because they're so good!

Meatloaf=good. Mashed potatoes=good. Together=better.

 I wanted to create a meatloaf recipe with simple ingredients but also good flavor because it's one of my favorite home cooked meals. Then, when this came to mind.. whole new level.

Main dish and side dish all in one!!

definitely cut into them with a fork because eating them like a cupcake felt super strange to me but enjoy this yummy meal however you'd like! I've tested this recipe with ground beef, ground turkey, sweet potatoes, and white potatoes and each version has been delicious!  

Tiff Tips

  1. I also made this recipe in a mini muffin tin and it worked perfectly! It'd be great to serve at parties. Just adjust the time to 20-25 minutes or until meat is cooked through. 

  2. The recipe is written for sweet OR white potatoes. If you want to make both, double meat ingredients or cut each potato ingredients in half

  3. It's easier to "frost" meatloaf outside of the pan so you don't have to transfer the "cupcake" with potatoes already on top

Meatloaf "Cupcakes"

Cook Time: 1 hour 10 min | Total Time: 1 hour 20 min

makes 12 large "cupcakes" or 24 mini "cupcakes"

Ingredients:

Meatloaf:

  • 2-2.25 lbs of ground beef or ground turkey (either works)
  • 1 egg
  • 1/2 cup tomato sauce
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp honey
  • 1 Tbsp minced garlic
  • 1/4 cup chopped onion 
  • 3/4 cups quick oats (use gluten free oats to make gluten free)
  • 2 tsp Italian seasoning
  • 2 tsp paprika
  • 1 tsp onion powder 
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Sweet potatoes:

  • 2 large sweet potatoes
  • 2 Tbsp melted butter
  • 1 Tbsp minced garlic
  • 1/2 tsp onion powder
  • 1 tsp paprika

OR

White potatoes:

  • 2 large russet potatoes
  • 2 Tbsp melted butter
  • 1 Tbsp minced garlic
  • 1 tsp onion powder
  • 2 tsp paprika
  • 1/4 tsp salt
  • optional: 2 Tbsp plain greek yogurt

Instructions:

  1.  Preheat oven to 400 degrees
  2. Wash potatoes and place on baking sheet. Let bake in oven for 1 hour
  3. While potatoes are baking, place meat in a large bowl and let sit
  4. Mix remaining meatloaf ingredients in a small bowl and add to the bowl with meat. Mix together
  5. Add an even amount of meat mixture to each slot of a greased muffin tin (each should be full)
  6. Place meatloaf in the oven when the potato timer has reached 30 minutes and bring temperature down to 350 degrees
  7. When the 1-hour timer goes off, remove potatoes from the oven (if they're not soft yet, place back into oven until they are soft enough to mash) and add 10 more minutes to the timer for the meatloaf to finish cooking
  8. Peel potatoes and place in large bowl. Using a hand mixer, blender, or fork, mash potatoes
  9. Add remaining potato ingredients and mix until a creamy. Place back into oven to reheat or keep warm if necessary
  10. When the 10-minute timer goes off, remove meatloaf from oven and let sit for 5 min
  11. Remove meatloaf from pan and place on plate
  12. Add mashed potatoes to a pastry bag or a ziplock (cutting off a corner big enough for mashed potatoes to fit through) 
  13. "frost" each meatloaf with potatoes to finish off the "cupcake" and enjoy!!
