NutritiousProtein Balls

paleo, gluten free, dairy free

Ingredients:

  • 1/2 cup almond flour (or almonds)

  • 1/2 cup protein powder (I use plain pea protein powder)

  • 1/3 cup pumpkin seeds

  • 1/3 cup ground flax seeds

  • 1/4 cup honey

  • 1/4 cup nondairy milk

  • 15 dates

  • 1/2 tsp vanilla extract

Instructions:

  1. Heat 1-2 cups of water over the stove or in the microwave and soak the 15 dates in the heated water for 5-10 minutes

  2. Add soaked dates, almond flour, protein powder, pumpkin seeds, flax seeds, and honey to a food processor or high powered blender

  3. Blend the ingredients for approx 30 seconds

  4. Scrape the sides, add milk and vanilla extract, and blend again until combined (the "dough" should become thick)

  5. Grab a small baking sheet and top it with parchment paper

  6. Form the "dough" into balls and place them on the baking sheet (recipe should make 12-16 balls)

  7. Refrigerate or freeze balls for about one hour to stiffen them up

Stays most fresh in the freezer or refrigerator
