Oven Roasted Potatoes

Soft, roasted potatoes seasoned with garlic and herbs are the perfect side dish.

It’s easy to underestimate russet potatoes and all their greatness. Most people associate potatoes with twice baked, fried, or mashed but roasted potatoes are just as wonderful. These potatoes come out soft with crispy edges and are full of flavor. 

The hour long bake time allows these potatoes to slowly roast all the way through, becoming soft and infused with flavor. Make sure you plan ahead for these so they come out as beautiful and delicious as possible.

The ingredients are simple in this recipe. Aside from the potatoes themselves, olive oil and various seasonings is all you’ll need. You can easily customize the flavor of the potatoes by adding or replacing seasonings of your own that you enjoy but the flavor combo I’ve provided tastes incredible with almost any meal.  

This recipe is inexpensive and budget-friendly which makes it a great side dish to incorporate into your meals. It can feed a large number of people for just a few dollars.   • 4 large russet potatoes

  • 1/4 cup olive oil

  • 1 Tbsp minced garlic

  • 1 Tbsp rosemary

  • 1 tsp thyme

  • 1 tsp basil

  • 1 tsp onion powder

  • 1/2 tsp salt


  1. Preheat oven to 400 degrees

  2. Wash potatoes and cut into chunks of desired size. Add potato chunks to large bowl

  3. In a small bowl, mix olive oil and seasonings together

  4. Pour olive oil mixture over potatoes and stir until chunks are fully covered

  5. Spread potatoes evenly onto a baking sheet and cook in oven for 1 hour or until potatoes are soft

  6. Remove potatoes from oven and enjoy!!

  7. Refrigerate in a sealed container for up to 5 days
