Easy, 2-Ingredient Crackers

paleo, low carb, gluten free, grain free, dairy free

 

Crispy, paleo crackers made with only 2 main ingredients. Easy to customize and easy to make.

Hi there! Anyone experience the endless afternoon snacking period between about 3pm and 5pm? Or maybe you have a gluten allergy and you show up to a Super Bowl party filled with bread, chips, wheat crackers, and pretty much everything you wish you could have but can’t. Or maybe you love crackers but you don’t always love the ingredients companies put in them and you don’t love the price of buying some without those ingredients. No matter where you fall on the snack/cracker dilemma spectrum of life, you can most likely find some comfort in the paleo, easy-to-make crackers. 

This recipe adheres to many food allergies, intolerances, and preferences and can make that afternoon snacking period much easier to satisfy. It only takes about 5-10 minutes to throw these crackers together and then you pop them in the oven and let them bake. Easy as that. You can quickly prep these on the weekend for the week ahead or quickly throw them together for a party or event.

Ingredients

These crackers are made from two main ingredients, almond flour and olive oil. Almond flour is simply almonds ground finely so this snack is like having a handful of nutritious almonds but in cracker form!! I love it.

Seasoning

I’ve included two seasoning options for these crackers but the possibilities are endless. If you experiment with some other flavor combos, let me know what you come up with! You can also split this recipe in half to try out two different flavors from the same batch. (1 cup almond flour + 2 Tbsp olive oil + 1 Tbsp water + seasonings)

You can munch on these crackers plain, use them to dip, or crumble them on a salad! 

makes approx 8 servings 

Ingredients:

  • 2 cups almond flour

  • 1/4 cup olive oil

  • 2 Tbsp water

 

Everything seasoning:

  • 1 Tbsp + 1 tsp Everything but the Bagel seasoning

 

Cumin seasoning:

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp salt

Instructions:

  1. Preheat oven to 400 degrees

  2. Mix almond flour, olive oil, water, and seasonings together in a large bowl

  3. Once fully mixed, press mixture together to form a ball of dough

  4. Place dough ball on a piece of parchment paper or greased surface and then place another piece of parchment paper on top to prevent sticking

  5. Roll out dough ( I use a rolling pin) until it is very thin

  6. Cut the dough into squares (or whatever shape you want the crackers to have). I like to use a pizza cutter

  7. Place parchment paper onto a cookie sheet and bake in oven for 10-15 minutes or until golden

  8. Turn oven off and let crackers remain inside for about 10-15 minutes with the oven door cracked

  9. Remove from oven and let crackers dry completely before storing

Store in sealed container or ziplock
