Peanut Butter Blossoms

Soft, extra peanut buttery cookies topped with a sweet, chocolate Hershey kiss

For all the peanut butter lovers out there, these cookies were made for you! These super peanut buttery blossoms are a great mixture of sweet chocolate and nutty flavor. Plus, a sprinkle of sea salt on top makes a yummy sweet and salty combo. 

The classic peanut butter blossom has always been one of my favorite cookies at the holidays because the combination of peanut butter and chocolate is always the best. These cookies are also fun to make, especially with young ones. They can help push the Hershey kisses in once baked!

These cookies have a slight twist because they’re made with cassava flour, a grain free flour that can be found on amazon.com or at some local groceries. If you want to replace cassava flour with another flour, you can use all purpose or whole wheat (1:1 ratio).

This recipe has lower sugar than most cookie recipes making it great for those who prefer a less sweet dessert or for those who have dietary restrictions but still want to enjoy a treat!

makes approx 24 cookies

Ingredients:

  • 1 1/2 cups cassava flour

  • 1 cup peanut butter

  • 1/2 cup softened, unsalted butter

  • 1/2 cup coconut sugar

  • 2 eggs

  • 2 tsp hot water

  • 1 tsp baking soda

  • 1 tsp vanilla

  • 1/4 tsp salt

  • 24 Hershey kisses

Instructions:

  1. Preheat oven to 325 degrees

  2. Cream butter and sugar together using a hand mixer or standing mixer until smooth

  3. Add peanut butter and vanilla and mix until combined

  4. Dissolve baking soda into hot water

  5. Add baking soda mixture, eggs, and salt and mix until just combined

  6. Slowly add flour until dough forms

  7. Measure 2 heaping tablespoons or use a cookie scoop and place dough on cookie sheet, about 3 inches apart

  8. Use a greased glass bottom or fork to slightly flatten each cookie

  9. Bake in oven for 8-10 minutes (cookies will look slightly underdone but will set once cooled)

  10. Remove cookies from baking sheet and immediately press Hershey kisses into center of cookie

  11. Transfer to a cooling rack

  12. Optional: sprinkle sea salt on top of cookies

Store in sealed container

for up to 10 days and enjoy!
