Pumpkin Chocolate Chip Cookies

Soft, sweet, pumpkiny cookies!!!!!...

they're seriously so good...

These cookies are perfect for Fall! I love pumpkin and

I LOVE chocolate so these are a dream for me in the Fall season!

This recipe is simple to make but I would recommend following the directions as written. I haven't tried making these without creaming the butter and sugar together, for instance, so I cannot guarantee that they will turn out as good if you change it up. 

The ingredients in this recipe are fairly accessible to most people in

average circumstances! Coconut sugar is the only out-of-norm ingredient

but it can be replaced with any granulated sugar (ex. cane sugar).

It's funny because I never want long recipe posts (because who actually reads these and I don't like overcomplicating it) but alsooooo I want to show the pics :) dilemma

So we'll just make a little photo collage!

But seriously, y'all, I really love these cookies and I hope you do too!

Ingredients:

  • 1 cup all purpose flour or white wheat flour

  • 1 1/4 cup coconut sugar (can replace with any granulated sugar)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 cinnamon

  • 1/4 tsp salt

  • 3/4 cup pumpkin puree

  • 1/2 cup butter (1 stick), softened

  • 1 egg (room temp preferred)

  • 2 tsp vanilla extract

  • 1 cup chocolate chips

Instructions:

  1. Preheat oven to 350 degrees

  2. Using a hand or standing mixer, cream the softened butter and sugar together in a large bowl

  3. Once creamed, add vanilla, pumpkin puree, and egg and blend until combined. Set aside

  4. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, and salt

  5. As you use the mixer to combine, slowly add the dry ingredients to the wet ingredients

  6. Once all of the ingredients are combined, fold in chocolate chips with a spatula

  7. Place dough in the fridge for 10 minutes

  8. After 10 minutes, remove dough from the refrigerator. Using a cookie scoop or measuring spoon, scoop heaping tablespoons of dough and form them into a balls

  9. Place dough balls on cookie/baking sheet, about 2 inches apart

  10. Bake in the oven for 10 minutes. Then, remove cookies from the oven and let them set for 5 minutes

  11. After 5 minutes, remove from baking sheet and enjoy!!
