Honestly, can you go wrong with pumpkin?? It’s a delicious squash full of nutrients and natural sweetness. I’ve been using it so often for recipes..by the end of this season, I will be tapped. out. on pumpkin.

If you make one of my other pumpkin recipes, this is a great way to use up the leftover pumpkin purée!

Favorite toppings: pumpkin seeds, splash of milk, sprinkle of cinnamon, nut butter, maple syrup drizzle, flax seeds, yogurt

Ingredients:

1/3 cups oats (use gluten free oats to make gluten free)

1/3 cup dairy free milk (or milk of choice)

1/3 cup water
-
1/3 cup pumpkin puree

2 tsp chia seeds
-
1 tsp maple syrup
-
1/2 tsp vanilla extract
-
1/2 tsp pumpkin pie spice (or cinnamon)
topping options:
-
pumpkin seeds
-
splash of milk
-
sprinkle of cinnamon
-
nut butter
-
maple syrup drizzle
-
flax seeds
-
yogurt
Instructions:

Add oats, milk, water, and chia seeds to a small sauce pan over high heat and stir occasionally

Once bubbling, continuously stir as you add in remaining ingredients

Lower heat to medium-low and let cook for 2-5 minutes or until desired consistency, stirring constantly to prevent the oatmeal from sticking
-
Remove from heat, transfer to bowl, add fun toppings, and enjoy!!
