Pumpkin Pie Balls

These little oatmeal balls are the best!

Quick and easy to make with minimal dishes + you can freeze some of these treats to save for later!

I love that this snack is easily portable. I drive an hour and half to school and an hour and a half back (four days a week) so I’m out of the house a lot of the time. it’s helpful to have prepped snacks ready for me to grab and stick in a container to take with me each day.

This is one of two Fall oat ball recipes I have for this season! ( + this recipe)

The pumpkin flavor mixed with the peanut butter in these makes for such a great combo!

makes 16-20 balls
Ingredients:

2 cups oats (use gluten free oats to make these gluten free)

1/2 cup pumpkin puree

1/4 cup runny peanut butter (or melt in microwave until runny)

1/4 cup maple syrup

1/2 Tbsp cinnamon (or 1 heaping tsp)
Instructions:

Add ingredients to a large bowl and mix until combined

Form balls of desired size and place on baking sheet, plate, or other freezer safe dish

Place in freezer for 10-20 minutes

Store in refrigerator for up to one week or freezer for 4-6 months
