Pumpkin Seed Pesto

A Fall twist on the classic pesto. 

Quick, easy, and delicious! 

Pesto is an awesome addition to meals or snacks. I love the flavor it adds to things such as chicken, crackers, and pasta. 

If you’re looking for a great source of healthy fats and great flavor to add to your day, check try pesto out. 

Ingredients:

  • 2 cups basil

  • 1/4 cup + 2 Tbsp olive oil

  • 1/4 cup + 2 Tbsp parmesan

  • 1/4 cup pumpkin seeds

  • 2 Tbsp pine nuts

  • 1 Tbsp minced garlic

  • 1/2 tsp lemon juice

  • 1/4 tsp black pepper 

Instructions:

  1. Add ingredients to a food processor (or blender) and blend until smooth

  2. Before serving, add a drizzle of olive oil to loosen

  3. Refrigerate in a sealed container for 1-2 weeks
