Salmon and Spinach Salad

with a Maple Tahini Dressing

A simple salad with a flavorful, tahini-based dressing

As a college student, my schedule an get pretty busy and with that, comes limited time to make meals. Some nights, I just want to throw together something light for dinner so I can quickly eat and continue to work. This salad is perfect for just that! Most of the time, I’ll buy frozen salmon to keep in the freezer and pull out whenever I’m craving it. 

This salad-for-one is quick to throw together  and calls for just a few ingredients. The salmon only takes 14-16 minutes to bake and the dressing can easily be made during that time. 

The base for this salad is spinach but any type of lettuce can be used. If you’re packing this salad for later in the day, I would use a tougher lettuce like iceberg or pack the dressing on the side. 

This Maple Tahini Dressing serves 1-2 people and provides the perfect flavor for this salad. The tahini gives a nutty flavor, the seasonings add a savory taste, and the maple syrup adds a touch of sweetness.

This salad makes a great lunch or dinner for one. It takes about 15 minutes to make and is filled with healthy ingredients and even better flavor! I hope you enjoy!

Salmon and Spinach Salad

with a Maple Tahini Dressing



  • Spinach 



  • 1 salmon filet

  • Salt & pepper


Maple Tahini Dressing

  • 1 Tbsp tahini

  • 1 Tbsp oil (avocado or olive)

  • 2 tsp maple syrup

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Pinch of salt


  1. Preheat oven to 400 degrees

  2. Sprinkle salt and pepper over filet and bake in oven for 14-16 minutes

  3. Mix dressing ingredients together in a small bowl

  4. When salmon is cooked through, remove from oven and place over bed of spinach

  5. Drizzle maple tahini dressing over salad and enjoy!
