Summer Berry and Feta Salad

gluten free, veg, nut free

Okay, so, summertime ice cream is pretty amazing but we can't forget about summer salads! Something about salads in the summer is so much better than any other time of year. I think it's because I'm not usually into Caesar salads or warm salads. I love the fresh salads with fruit <33 This is a super simple salad that will add lots of micronutrients into your day. It's one of my favorites! 

The dressing I use is my Honey Balsamic Vinaigrette that I posted recently under "Condiments, Nut Butters, Dressings, Etc."

Kale. There's quite a disagreement on this dark leafy green. There are those who live by it as if it were the heartbeat keeping them alive and then there are those who laugh at the word "kale" and would rather eat bugs than consume such a bold vegetable. We can't forget about the middle ground peeps over here though. Kale is obviously quite the hype right now for health and it is pretty great for you but it's just a food. Like it, don't like it, eat it, don't eat it...I promise your health won't be damaged by refraining. BUT at least try it once to see. Many people dislike it or dislike the thought of it, I suppose, but if you learn the right ways to prepare it, kale can be really tasty. Some people like eating it raw but I find it really chewy and bland that way. However, when I massage it with a vinaigrette or dressing....totally different!

Summer berries are the perfect addition to salads!!! (Especially if they're ripe and super sweet) Any fruit will work for this recipe, though. There's a lot of room for customization! I usually enjoy this salad as an afternoon snack but if I do have it as a meal, I'll add additional protein, such as chicken, as well. 

Tiff Tips

  1.  2 cups may seem like a lot when you first put it into a bowl, but massaging the kale with the vinaigrette will cause it to shrink 

  2. Actually massaging the vinaigrette into the greens with your hands will soften the kale and ensure the dressing speaks evenly

  3. Nuts and seeds are also a great addition to this salad!

Summer Berry and Feta Salad

Ingredients:

Instructions:

  • 2 cups chopped kale

  • Tbsp Honey Balsamic Vinaigrette linked 

  • 1-2 Tbsp feta cheese

  • strawberries and blueberries 

  1. Place kale in a bowl and drizzle the vinaigrette over top

  2. Massage the vinaigrette into the greens with your hands or mix with fork

  3. Add toppings and enjoy!

[pairs well with chicken, avocado, nuts, and seeds!]
