Creamy Cashew Pasta

A linguine pasta dish with sun dried tomatoes and chicken and mixed with a creamy, cashew based sauce

I’m usually a pasta and marinara kind of girl but sometimes those cravings hit….and my recent craving was *creamy* pasta. I’ve never liked alfredo so that was out of the question but I did have in mind that you can use cashews as a creamy base so here we are.

I have recently discovered sun dried tomatoes and I gotta say, I’m a huge fan. They add great flavor to many dishes including this dish. As I’ve mentioned in previous posts, I love pasta and it was a definite staple for us growing up so it’s very much comfort food to me. 

The sauce for this dish takes about 10 minutes to make, the pasta cooks according to the package (usually less than 10 minutes), and the chicken breast doesn’t take too long, especially since you cut it before cooking. This meal can be made quickly which is perfect for weeknight dinners. 

The protein from the chicken, fat from the cashews, and carbohydrates and fiber from the pasta makes this meal pretty well balanced. I also like adding a salad or side of veggies for some micronutrients and it completes the meal nicely. 

I love adding new meals to my normal set of go-to’s to keep things fresh and exciting! If you try this out, I hope you love it. 

Ingredients:

  • 8 oz whole wheat linguine pasta (4 servings)

  • 2 large chicken breasts

  • 6-10 sun dried tomatoes

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • Sprinkle of salt

  • 1 cup cashews

  • 1 cup broth

  • 1 tomato

  • 1/2 cup nutritional yeast

  • 1 Tbsp minced garlic

  • 2 tsp onion power

  • 2 tsp garlic powder

  • 2 tsp basil

Instructions:

  1. Boil a large pot of water on the stove and then follow pasta instructions for cooking

  2. Cut chicken breasts into small pieces and cook in a skillet with a drizzle of oil, 1 tsp onion powder, 1 tsp garlic powder, and a sprinkle of salt

  3. While the pasta and chicken breasts are cooking, add cashews, broth, washed tomato (with center cut out), nutritional yeast, minced garlic, 2 tsp onion powder, 2 tsp garlic powder, and 2 tsp basil into a food processor or high powered blender

  4. Blend sauce until smooth or leave some small cashews pieces for texture

  5. Once pasta is finished cooking, drain the water and return the pasta back to the pot

  6. Add sauce to the pasta and mix together

  7. Once chicken is cooked, add it to the pasta and sauce mixture

  8. Lastly, cut sun dried tomatoes into small pieces and mix into the pasta

  9. Add broth as needed if the sauce becomes too thick

  10. Serve hot and enjoy!
