Turkey Sausage, Apple, & Butternut Squash Hash

Simple ingredients, easy recipe, Fall flavors, and great for meal prep!

This Fall recipe has only four ingredients and requires no extra seasoning! The sweetness from the apple, the Fall taste from the squash, and the savory addition of the sausage makes this dish a delicious combination of flavors. The ingredients are also fairly inexpensive making this a budget friendly meal.

You’ll only need one pan to make this dish which makes for an easy clean up!

This recipe typically serves 1-2 people. If you plan on making it for your family or for a bigger group, you could simply multiply the recipe. It calls for 1 apple and 1 cup of butternut squash per 2 turkey sausage links.

Tiff Tips

  • The turkey sausage can be substituted with whatever meat, or meat substitute, you enjoy

  • The butternut squash can be replaced with a different squash, such as pumpkin, or something different like sweet potato chunks 

  • I enjoy this dish on its' own with the only seasoning coming from the sweet Italian turkey sausage but if you might like other seasonings as well, get creative and let me know what you try out!!!

  • You can find uncooked turkey sausage links in the meat section at most grocery stores, It should be clearly labeled sweet Italian turkey sausage. The brand I used for this recipe was Jennie-O lean, all-natural

Turkey Sausage, Apple, & Butternut Squash Hash

serves 1-2

Ingredients:

  • 2 uncooked, sweet Italian, turkey sausage links

  • 1 large apple

  • 1 cup cubed butternut squash

  • 2 tsp coconut oil

Instructions:

  • Cut sausage links into small pieces and cook in nonstick or sprayed pan over medium heat

  • While the meat is cooking, cut apple and butternut squash into cubes

  • Once the turkey sausage is fully cooked, drain meat if necessary, remove from pan, and set aside

  • Wipe out pan and add coconut oil, apple, and squash

  • Cook over medium heat, preferably with a lid, until butternut squash is soft and apple is slightly soft (should only take about 10-20 minutes)

  • Once apple and squash are soft enough for your liking, add sausage back into pan and allow to heat together for a minute or two

  • Remove from heat, serve, and enjoy!!

Store in refrigerator for 3-4 days
