Whole Wheat Snickerdoodles

Classic snickerdoodles made with whole wheat flour and filled with sweet, cinnamon flavor

Snickerdoodles have never been a holiday cookie I particularly enjoy that much but this recipe has changed my tune. Chocolate will always have my heart but these cookies have an irresistible, cinnamon sugar flavor that takes me straight into the holidays. 

These cookies are incredibly soft and light throughout. Most baked goods that are made with whole wheat flour turn out dense and heavy but these cookies are thankfully an exception. 

As with most cookie recipes, these snickerdoodles are quick and simple to make. Cookies are a great dessert to bring to family and friend gatherings or other social events because cookie recipes usually make quite a few cookies plus they’re usually pretty easy to follow.

makes approx 12-15 cookies

Ingredients:

cookie dough:

  • 1 1/2 cups whole wheat flour

  • 3/4 cups coconut sugar

  • 1/2 cup softened, unsalted butter

  • 2 Tbsp maple syrup

  • 2 eggs

  • 1 Tbsp lemon juice

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/4 tsp salt

 

coating:

  • 1 tsp cinnamon

  • 1 Tbsp coconut sugar

Instructions:

  1. Preheat oven to 350 degrees

  2. Mix coating mixture together in a small bowl and set aside

  3. Use a hand or standing mixer to cream butter and sugar together

  4. Add maple syrup, lemon juice, vanilla, cinnamon, and salt and mix until combined

  5. Add eggs and baking soda and mix until just combined

  6. Slowly add flour and mix until dough forms

  7. Measure two heaping tablespoons or use a cookie scoop to form dough balls

  8. Roll dough balls in coating mixture until fully covered and place on baking sheet, about 3 inches apart

  9. Use a greased glass bottom or fork to slightly flatten each cookie

  10. Bake in oven for 9-11 minutes

  11. Tip: Take cookies out of the oven while slightly doughy and let cool for deliciously soft and chewy cookies

  12. Remove cookies from baking sheet and let cool on wire rack

Store in sealed container for up to 10 days
